Recipe #4: Dinner in a Pumpkin


Dinner in a Pumpkin

Ingredients:

½ lb. 10% fat hamburger meat (beef) (240 cal/serving)

2 Tablespoons soy sauce (10 cal/serving)

1 Tablespoon brown sugar (15 cal/ serving)

1 ½ Teaspoons butter (20 cal/ serving)

2/3 cup uncooked white rice (200 calories/serving)

½ can cream of mushroom soup (65 cal/serving)

½ (4oz.) can mushrooms (drained), optional

¾ cup chopped celery, optional

½ cup chopped onion, optional


Cook rice. Sauté the celery and onion. Brown the meat, then add to vegetables and remaining ingredients in a glass baking dish or bowl. Option: Place in a hollowed pumpkin or just place in a casserole dish. Bake at 350 degrees for 1 to 3 hours (if in pumpkin, cook until pumpkin is tender.) This recipe only takes about 45 minutes to bake if not in a pumpkin. I never do the vegetables because Larry doesn’t like then and it makes it easier. I serve it with corn bread.
